INSTRUCTIONS
Make the Tart Crust:
- Combine flour, sugar, salt, and butter in a food processor. Pulse until the mixture resembles coarse crumbs.
- Add egg yolk and pulse until the dough comes together.
- Wrap the dough in plastic and chill for 30 minutes.
- Roll out the dough and press it into a 9-inch crust pan.
- Prick the bottom with a fork and chill for another 30 minutes.
- Bake in a preheated 375°F oven for 15-20 minutes, or until golden brown. Allow to cool completely.
Make the Coffee Caramel Filling:
- Heat heavy cream in a saucepan until it begins to simmer.
- In a separate pan, cook sugar and water over medium heat it turns golden brown.
- Carefully pour the hot cream into the caramel, whisking constantly.
- Whisk in butter, coffee, and vanilla until smooth.
- Pour the caramel filling into the cooled trat shell and let it set for at least 2 hours.
Make the Whipped Cream Topping:
- Using a hand mixer or stand mixer, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
Assemble the Tart:
- Spoon or pipe a dollop of whipped cream onto the set caramel filling.
- Serve immediately or chill until ready to enjoy.
